I always keep a couple of cans of canned fish in stock. We especially love sardines. They are good for salad, soup, and sandwich. A few minutes and – come to the table!
Prepare your ingredients.
Brown the loaf slices in a toaster or dry skillet. Don’t overdo it – we don’t need croutons!
Combine mayonnaise and table horseradish in a bowl. Season to taste with salt and pepper. Add chopped green onions and stir.
Spread the sauce over the loaf slices.
Spoon the sardine slices onto the loaf slices. Add a slice of cucumber and a slice of hard-boiled egg from the edge.
Garnish the sandwiches with fresh herbs. Sprinkle with hot pepper flakes if desired – this will add spice.
And serve immediately, not allowing the loaf to get wet.
