To prepare beans in a tomato for the winter, you need beans and tomato paste. Choose the first one to your taste, it looks beautiful in cans white, but I had a choice between dark and pockmarked, I decided to preserve pockmarked, the main thing is that the variety of beans is suitable for this purpose. There are varieties of beans that, when cooked, even for a short time, lose their shape, turn into mashed potatoes, such beans are not suitable for this recipe, it is better to make mashed potatoes from them with fried onions!
To prepare beans in tomato sauce, you will need the following ingredients: beans, water, tomato paste, granulated sugar, 9% table vinegar and salt.
Rinse the beans well in clean cold water. Remove those grains that float, this means that the inside of the bean is empty, eaten by a bug. Pour a bowl of beans with clean water and leave for 8 hours, or overnight.
In the morning you will see that the beans have increased in size, the water has slightly changed color. Rinse the beans again.
Take a heavy-bottomed saucepan or cauldron. Transfer the beans, fill them with 1.3 liters of water. Bring to a boil.
Reduce the boil to a minimum and simmer for 40 minutes under the lid ajar.
Add tomato paste, salt and sugar. Cook for another 15 minutes.
Taste the beans, are they cooked, soft, adjust the salt and sugar to your liking. Remove from heat, pour in vinegar and stir.
Place the beans with tomato sauce in sterile jars. Roll up or twist, whichever you use for canning.
Cool and store in pantry. When the beans are completely cool, the sauce will thicken slightly.
